  1. Congrats to Carla of Utah! One of our favorite casseroles is an old Weight Watchers recipe--Queen Ranch Chicken Casserole. It has chunks of chicken, RoTel tomatoes, chopped onions, torn corn tortillas, and a chicken broth based sauce. It is topped with cheese. Yum! Create a Friend looks like a fun addition to my Cricut cartridge collection!

  5. This Create a Friend Cart has got to be the cutest I have seen so far. I am just starting to make cards and am loving it. I have 4 grandchildren that this would be perfect for. Casserole, hmmmmmm, the boneless chicken with cheese and cream of mushroom soup is good. I don't really make many, my husband is a meat and salad kind of guy, plus he does most of the cooking. :)

  6. Even though I don't cook, I do have a favorite casserole. It's called chicken & broccoli. You take a bag of frozen broccoli and spread on the bottom of the casserole dish. Then put boneless chicken on top of that. Mix a can of cream of mushroom (or cream of chicken) with a big dollop of Miracle Whip and mix together. Spread over the top of the chicken, then top with Pepperidge Farm stuffing in the blue bag. Bake at 375 degrees for 45 minutes. Yummy!!!!!

    And I would love to win this cartridge. I've been wanting it since it came out. My daughter is expecting in March and this would be a perfect cartridge to have as the baby grows up!

    The link above is to a Trisha Yearwood casserole that I really like. It is similar to a casserole served in my family for years. I got the recipe from my Mom years ago minus any quantities for the ingredients which is a common theme with my Mom's recipes.

    The create a friend cartridge is so cute and on my ever growing wish list. Your blog keeps adding to that wishlist! LOL

  20. Oh goodness! Our family's favorite go to casserole is called "Hot dish". Brown ground turkey (or beef) in a skillet with diced medium onion (until meat is browned and crumbly). While meat is browning, dice a couple of potatoes (approximate to fit in your casserole dish), mix in one can cream of mushroom soup, one can vegetable beef soup and one envelope lipton onion soup mix. Add meat and onions after browned (and drained) to casserole mixings and put in enough water to make a nice sauce...Mix thoroughly and bake at 350 for about 1+ hours (till potatoes are tender)...serve with biscuits or make dumplings to put on top during the last 10-15 minutes of cooking...a little side salad and voila! A nice comfort dinner...This has been my husbands favorite since he was a kid. (Thanks Mom-in-law!) You can also add other things to casserole like kidney beans, green beans, diced carrots, almost anything! (Oh...and that cartridge is cute!)

  22. Don't know if this qualifies as a casserole BUT my family loves baked spaghetti. Make up the spaghetti as usual put it in a baking dish and top with shredded cheese...bake at 350 until golden brown on top.

  24. I would love Create a Friend for my classroom. I teach 1st grade and this would go with my math units so well. My favorite casserole is Tator Tot casserole. It is such a confort food and easy to make. Hamberger, cream of mushroom soup, cheese and tator tots. Yummy.... Linda(Montana)

  27. HI Joy! My favorite casserole (we call it a hot dish here in Minnesota!) is super easy and well loved here. Put meat of your choice, rice of your choice and veggies of your choice in a crock pot with water and cook. In the last half hour add 1 cup heavy cream and a half a stick of real butter. Salt and pepper to taste.

  28. There are some wonderful fav casseroles listed. My fav casserole is a macaroni & cheese casserole made with elbow macaroni or shell pasta cook as directed on pkg. Then add milk & eggs to cooked pasta w/ cheese of choice; I like cheddar or mozarella. Bake for 30 mins. Add cooked bacon pieces to top & bake 5 more mins. Lately I''ve been making kebobs. I like the taste of the vegs; especially grape tomatoes, hot off the skewer. Thanks for another wonderful giveaway.

  31. Just had my favorite casserole for lunch. It's a Ruben casserole, the classic sandwich in casserole form. My daughter graduates from high school this year. This cartridge would be used on every page of her senior scrapbook, party decorations and more.

  34. My favorite casserole to make when my kids were growing up was the Tater Tot casserole. We raised 7 daughters and this casserole was a favorite to all of them. It was unusual to find one dish all of them liked. I would love to win the Create a Friend cartridge--I could get a lot of use out of it since we have almost 15 grandchildren now:)

  35. As an empty nester, casseroles just seem to be too much for us to eat, even with leftovers. When the kids were home, I would make a casserole with items that were in the pantry and make up new recipes that way. You should try it!! Speaking of trying out something, I WOULD LOVE TO TRY/GET A NEW CARTRIDGE!!! This one would be so much fun as I have little grandchildren and hope to do their scrapbooks for them!!! Hint, hint!!

  49. HI Joy! My favorite casserole is Three Bean Baked Beans. Besides the traditional baked beans you add butter beans, kidney beans, bacon, ground beef and onions with various flavorings. Really delicious and makes great leftovers. I've had my eye on the Create a Friend cartridge and would love to win it.

    Original King Ranch Chicken

    Ingredients of Original King Ranch Chicken
    * 1 can cream of chicken soup
    * 1 can cream of mushroom soup
    * 1 can Rotel tomatoes w/ peppers
    * 1/2 cup onion chopped
    * 1/2 cup green pepper chopped
    * 1 cup+ chicken broth
    * 1 pkg. grated Monterey jack cheese
    * 1 chicken, boiled and de-boned
    * 12 corn tortillas --or--
    * 1 pkg. tortilla chips --or--
    * noodles

    Preparation of Original King Ranch Chicken
    Boil chicken, remove meat from skin and bones.

    Sometimes I will use 6-8 chicken breasts instead of whole chicken when I'm in a hurry.

    Saute onions and green pepper.

    Mix with soups, tomatoes, cubed chicken, and chicken broth.

    Line bottom of Pyrex casserole with six tortillas.

    Add 1/2 of chicken/soup mixture; spread over tortillas. Sprinkle grated cheese over mixture.

    Then make another layer of six tortillas, chicken/soup mixture, and cheese. Cover with foil and bake at 250-300 F 1 hour until cheese

    is bubbly.

    Please note that you can make this recipe much lower in fat by using the fat free soups and fat free chicken broth. It turns out just as tasty.

    I've also substituted Cheddar Cheese, as well as Lite Velveeta in place of the Monterey Jack cheese and it was all good.

  56. My favorite casserole is one that my cousin's wife made. It has ground beef, rice, cream of chicken soup, celery, peas, and onions in it. When you serve it, top it off with soy sauce & it tastes like Chinese food. Super yummy!!

    I love making cards for my grandchildren and the Create A Friend cartridge would be perfect for those cards!!

    My favorite casserole is called Hamburger Pie. You cook on top of the stove, 1 to 1 1/2 lbs. of lean ground meat, drain well. Stir in cream of mushroom soup (can use any cream soup). Then drain 1 or 2 cans of french style green beans and put on top of the meat. Then make instant mashed potatoes on top and cook in oven (350) for about 35-45 minutes until top of potatoes are browned and soup starts to make a gravy and bubbles around the edges. One dish, meat, potatoes and veggie. Very simple.
    I was over to the Tampa area this weekend and found out that the POSH Scrapbook store on Tampa Rd. in Palm Harbor has CLOSED. I was so disappointed as I go there every time I go to the west coast. Have heard you mention it on your blog as well so thought I would let you know.

    1. A favorite at our house is TaterTot casserole. Saute onions and green pepper. Add ground meat to brown. Drain. Add mushroom soup. (Can add more mushrooms If you like). In a baking dish layer tatertots and meat . (I have at least 2 layers of both) bake at 350 for about 30 min. Put cheese slices on top and put back in oven long enough to melt.

  66. I like a chili cornbread casserole. You make spicy chili and place it in a casserole dish, then you mix up cornbread mix and pour it on top. Place it in the oven and bake it until the cornbread is done. I tried to buy this cartridge at Joann's last week, but it was out of stock. I love it!

  71. Congrats to Carla! Love the new look of the blog. My favorite casserole doesn't have a name but it's super easy. Brown 1# ground beef with a chopped onion. Drain week. Add one large can stewed tomatoes & simmer until most of the juice is gone. Man l while, cook 16 oz of pasta shells out large elbow macaroni. Drain well when tender. While still hot, stir in one pkg of cream cheese until melted & well blended. Pour meat & tomato mixture into 9x13 casserole fish that had been spayed with Pam. Top with pasta mixture. Cover with grated cheddar cheese. Bake at 350° until bubbly. Serve l with a nice salad. Perfect for cold days! You can substitute a large can of rotel if you like things a bit spicey & as green chili's to pasta mix. I use Italian stewed tomatos. Very yummy!! Thanks for another great giveaway!!

  72. My current favorite recipe is called "Honey Garlic Chicken"
    1 1/2 lbs. boneless skinless chicken thighs
    3 Garlic cloves minced or chopped -- I just keep a jar of minced/chopped garlic in my fridge and pull it out and guess-timate whilst spooning out what might be 3 cloves worth.
    1/2 Cup low sodium Soy Sauce -- I use what's in my kitchen cabinet. If you don't have low-sodium use the regular
    1/2 Cup Ketchup
    1/2 Cup Honey
    (optional) fresh basil, shredded, for garnish -- I haven't had any of this in the kitchen so I don't know if it would help having it on this recipe or not.

    1. Place chicken into a slow cooker (I used my Nesco Roaster because it only takes 1 1/2-2 hours to cook and tastes awesome). I'm sure it would be equally awesome if I used my crockpot.
    In a small bowl whisk together the garlic, soy sauce, ketchup and honey. Pour over the chicken and cover.
    2. Now is where I differ from the original recipe: after I poured the flavorful sauce over the chicken I then added cut up baby carrots and cut up raw potatoes -- this way I get both my meat and veggies in one dish and the veggies get an extra nice taste to them.
    3. Cook in a slow-cooker for 6-8 hours on low or 3-4 on high or if using a Nesco Roaster, or similar, cook around 300 degrees for 1 1/2 - 2 hours give-or-take.
    4. My original recipe from "The Girl Who Ate Everything" blog says to put the chicken onto a plate then transfer the remaining sauce to a saucepan and reduce down over med. heat until desired consistency is reached. She mixed a teaspoon of cornstarch with a tablespoon of water and added it to the sauce then continue cooking until it thickens to your satisfaction. (Note: You can use Flour instead of cornstarch to thicken a sauce but I recently found out that you could instead use Mashed Potato flakes for sauce thickening too and it gives a really nice extra flavor to your sauce!)
    5. Serve a little sauce over the chicken and garnish with the fresh basil. (I live alone so I just spoon what I want onto a plate or into a bowl and it's mealtime for me!)
    6. Serve chicken over rice with some broccoli or green beans on the side. This sounds good too but since I added the potatoes and carrots whilst cooking I didn't see the need but perhaps next time I'll use different veggies -- whatever it in the kitchen gets cooked for me. Easy-peasy, as they say these days.

  74. I love to create 1 of a kind casseroles. My favorite would be a "noodle pleaser" which really is a short cut lasanga. I use wide egg noodles, and mix everything together and top it with ooey gooey mozzarella cheese.

    It took me a few days to remember what it's called, but one of my favorite casseroles is Shepard's Pie!!! :) I love one pot meals and they are so good during the cold weather!
