  3. I like a chicken broccoli noodle casserole. You could use cream of mushroom soup, but I make my own chicken broth based sauce and add mushrooms,as my son is allergic to milk. Then I add (soy)sour cream to make it creamy.

  4. No I don't... lol.. wish I did... (I"m lookin' for CHICKEN POT PIE recipes) I'm going to follow this to see if anyone does post a good chicken recipe.. always interested in seeing good ones/new ones/or something I wouldn't have thought of!

  6. Love those leaves! Already thinking of what I could make with them!! As far as a chicken casserole...some pasta, cubed chicken browned, your choice of veggie...I like broccoli or peas and corn, your choice of cream soup. Mix together, bake covered for 30 minutes.

  7. Creamy Chicken Casserole with Rice

    Ingredients:
    4 cooked chicken breasts, cut up (alternate: large can of canned chicken)
    1 c. (8 oz.) cream of chicken soup
    1 c. (8 oz.) cream of celery soup (alternative: cream of mushroom.)
    1 c. (8 oz.) sour cream
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. celery seed
    1 - 1 1/2 pkg. Ritz crackers (about 50 crackers)
    approx. 6 Tbsp. butter/margarine

    Cooked rice, enough for 4 people (I usually use two, boil-in-a-bag, white rice. It takes 10-20 minutes of prep time.)

    Directions:
    Bake chicken breasts with or without breading, tear/cut into bite sized pieces.
    (I usually buy canned chicken. You could even use left overs!)
    Mix pieced chicken, both cans of soup, sour cream, salt, pepper and celery seed into a 2-quart casserole dish.
    Use a spoon to spread mixture so that it's level in the casserole dish.
    In a mixing bowl, crumble crackers until they are a fine consistency.
    (Don't spend a lot of time on this. You just don't want big chunks.)
    In a separate bowl, melt approximately 6 Tbsp. of butter.
    Add melted butter to crackers, a little at a time, and mix together to form crumb topping.
    (You want the crackers to absorb the butter, not too much, however, or you'll have soup. )
    Spread crumb topping evenly on top of the chicken mixture.

    Bake 350*F for 35-40 minutes, until sides are bubbly and top is lightly brown.

    About 10-20 minutes before Casserole is finished, cook enough of your preferred rice, white or brown, to make for 4 people. (Boil-in-a-bag rice is MUCH faster!)

    Serve casserole mixture over cooked rice. Serves approximately 4.


    I hope you try my recipe! I wrote a lot of details for clarity so it seems complex, but really, it's SUPER easy, and fast! Oh, and D-E-L-I-C-I-O-U-S ! My family can't get enough of it. Shh, when I substitute cream of mushroom soup, my mushroom haters notice a change but don't notice that it's mushrooms! God forbid we eat vegetables! LOL.

  10. I have several, but the most requested is my Wine Chicken. I use chicken breasts, boneless and skinless to start with. Pound them with a meat mallet and then coat them in milk and then crackers crumbs. Brown in a skillet and remove to a 9 X 13 pan. Once all the chicken is cooked and browned, wipe out the saute pan and add mushrooms if you like them, and if not, just add a 1/2 cup white wine. You just want to cook off the alcohol, and then pour this mushroom./wine over the pre-browned chicken in the 9 X 13 pan. Bake for 25 minutes and then bring out pan and cover chicken pieces with mozzarella shredded cheese and bake again for just long enough to melt the cheese and slightly brown it. I didn't mention the amount of chicken as I always double or triple the batch, that's how quickly it goes from here!! Last time I made over 14 pieces and I still didn't manage to freeze a few like I had intended. By the way, they do freeze well and make a great thing to quickly heat up on cold nights for a fantastic supper. Let me know if you try it, and what your family thinks?

    Chicken Chipulos



    Serving size: 6


    Ingredients:
    2 (10 3/4-ounce) cans cream of chicken soup
    2 cups shredded cooked chicken
    1 (4-ounce) can diced green chili pepper
    1 onion finely diced
    1 (8-ounce) container sour cream
    2 cups shredded Cheddar cheese
    8 10 in. flour tortillas


    Directions:
    DIRECTIONS:
    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Combine the soups, chicken, green chiles, onion and sour cream in a medium size bowl. Set aside.
    3. Rip tortillas into bite size pieces and layer 1/3 onto the bottom of a 9x13 inch baking dish. Layer chicken mixture on top, then a layer of cheddar cheese. Repeat two additional times, making sure to end with cheese on the top layer. Bake in preheated oven for about an hour and serve.

  13. American Test Kitchen just had a show on chicken stew yesterday. You might check out their website for the recipe. Its all about developing the flavors and adding the chicken last so it doesn't dry out. Good luck in your search and thanks for the chance to win!

  15. I wish I could offer you a recipe other than what the other commenters have, but I really can't. I don't make too many casseroles, so I don't have any favorites in that regard. Some of the recipes already given sound awfully good, though. I may have to give some of them a try, too! Thanks so much for the coupons.

  16. I love the feathers and the chance to win. My family's favorite Chicken dish is 2 chicken breast sliced. Wrap each slice with some diced onions in a corn tortilla and put in a greased casserole dish. I get about 12 rolls in a square pan. Take a can of cream of mushroom soup mixed with 1 1/2 cans of milk and pour over the tortillas. Bake at 350 about 1/2 hour. Put shredded cheddar cheese on top and put back in oven till cheese melts.
